Pata Negra or Jamon Iberico is the most famous and renowned Spanish ham in the world, It is a real pride for the Iberians.
It is a product of the highest quality, superior to all other foods of this kind. The main reason why many considerd Pata Negra to be a ham number one on the market lies essentially in the production cycle of the Iberian “ham” (pig breed).
The breed of pigs from which PATA NEGRA is produced is characterized by thick black or gray bristles, and they raised in a wild and very particular areas – the region of Extremadura, around Yagubo (Huelva), and in the mountains near Salamanca. They feed on herbs and acorns and aged for at least two years.
The feeding of animals with acorns makes Pata Negra such a specific product – for example, the fat has a structure very close to olive oil and therefore melts in the mouth, leaving an intense and delicate taste, and the meat is dense and tasty.
Regarding its natural consistency, Pata Negra can be defined as delicious and healthy food, incomparable to any other ham.
